Serves 10 guests

Ingredients for the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Drink (produces 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Method

To prepare the Citrus Syrup: Put every components in a saucepan, bring to a simmer, mixing to dissolve. Next, take off the heat and leave to reach room temperature entirely. Transfer into a clean bottle, seal and refrigerate it chilled, where it will keep for about four weeks.

To make Batch Mix: Combine all the liquids in a sizeable container, leave to sit for 60 minutes, then strain best through a fine cloth, so it's perfectly clear.

To serve: Add 85ml from the premix into your mixing glass packed with ice, and stir lightly for a minute to chill. Pour to a cold coupe glass or a similar vessel, decorate with some cranberries adding the final touch with a light spray of mandarin oil over the drink.
